CREAMY CHICKEN BROCCOLI


Ingredients:
  • 2 cups broccoli
  • Chicken breast sliced into edible size
  • 1 tbsp olive oil
  • Salt, pepper
  • For the cream:
    • 1/4 cup flour
    • 1/4 cup shredded cheese
    • 1 cup of milk
    • one pinch of salt

Directions:
  • Cook chicken pieces in olive oil and season as desired
  • Add broccoli when chicken is almost cooked
  • Cook for a few more minutes until broccoli is tender
  • For the cream:
    • Pour milk in a hot pan
    • Add flour
    • Add cheese
    • Add the salt
    • Stir until a smooth creamy texture is obtained
  • Pour the creamy sauce onto the chicken and broccoli



YOGURT, MILK AND BANANA SMOOTHIE

 

Ingredients:
  • 2 tbsp of Greek yogurt
  • 1 glass of low-fat milk
  • 1/2 banana

Directions:
  1. Slice the banana.
  2. Mix everything in a blender.
  3. Blend for about one minute until the desired texture is achieved.
  4. You may vary the amount of banana for more or less sweetness.
  5. For a thicker and more creamy texture, add more yogurt and less milk.

Why prepare this smoothie?
  • I personally don't like Greek yogurt. So, it's a good way to still consume it.
  • It's a very healthy combination.
  • It's high in protein due to the Greek yogurt.
  • You get your dose of calcium from the milk and yogurt.
  • No sugar added, the banana does the job.
  • It's easy and quick.


TUNA SALAD WITH SAUTEE VEGETABLES



Ingredients:
  • 2/3 canned tuna in mineral water
  • 1/2 carrot
  • 1/2 eggplant
  • 1 medium tomato
  • 1 tbsp olive oil
  • Lettuce

Directions:
  1. Slice the eggplant and carrots. Sautee in 1 tbsp of olive oil.
  2. Slice the tomato. In a salad bowl, mix the tomato slices with tuna.
  3. Prepare a lettuce salad.
  4. You can add spice and flavor as you wish.
  5. Enjoy your meal!
